Courses in The Gelato University

CGU was founded in 2003 by Carpigiani Group from Italy. Their mission is to spread the gelato culture worldwide by creating gelato professionals throughout the world.

The complete curriculum in CGU (including basic, intermediate, advance, and internship) will take 19 days to complete, a relatively short time to become a gelatiere. Isn’t it just like regular ice cream?

Never ask whether gelato is the same as ice cream to any Italian because the answer is NO.

CGU teaches how to make true Italian gelato, not ice cream. The difference lies in the main ingredients and techniques.

First, gelato contains less fat than ice cream, because gelato is made from milk, not cream. Next, the sugar level in gelato is less than in ice cream. Gelato usually has around 30% of sugar, while ice cream has around 50% sugar.

Gelato also contains less air and is served at a higher temperature. By containing less air, gelato can maintain its flavor than ice cream. While storage temperature will affect the creaminess of the product. Consequently, gelato has a richer flavor than ice cream. Lastly, ice cream is typically produced in large batch, while gelato only produced in small batch – hence the description “artisanal” product.

In CGU other than gelato, you will learn about sorbet as well. The main difference between sorbet and gelato lies again in the main ingredient. Sorbet is made with water or fruit juice – not milk or cream. Since based on fruit, sorbet is considered healthier than gelato.
